We all know the science of lemon. The general science is that lemon is a sour fruit with vitamin C. Let me tell a story before entering further into science.
Captain James Cook (1887-1890) carried large quantities of lemons on his ship to protect sailors from scurvy. The sailors had to eat that lemon every day as a rule. As a result, James Cook's sailors survived the scurvy. Understandably, Captain Cook discovered the island of Hawaii with those surviving sailors.
Scurvy is caused by a lack of vitamin C. Lemon is a very good source of vitamin C. Not just vitamin C. Lemons contain vitamins B1, B2, B3, B5, K, carbohydrates, protein, riboflavin, minerals, calcium, magnesium and phosphorus. It does not contain any saturated fat and cholesterol. There are very low levels of calories. Vitamin C is not the only cure for the disease. It strengthens the human body's immune system. Regular consumption of lemon reduces weight, nails and skin are beautiful, stomach is healthy. In addition, lemons can play an important role in curing many other important diseases.
People are more inclined towards lemonade during this coronal period because of the information to strengthen the immune system of the human body. Not that Bengalis did not eat lemons. Lemon has been mentioned in Bengali food for a long time.
Fifteenth century poet Vijayagupta in his poem 'Padmapuran' has mentioned oranges, oranges, lemons, lentils, leaf lemons, paper lemons etc. These are all mainly lemon and citrus fruits. These citrus fruits are divided into 16 species. However, most of them are wild species. Lemon, Lime, Citron, Mandarin Orange, Sweet Orange, Pamelo — we usually eat a few species of lemon and citrus fruits.
Our best known and favorite is the paper lemon lime species, the sherbet lemon sweet lime species. Lemon is a leafy lemon, columbine, cardamom, seedless lemon. For making sherbet, lemons i.e. leafy lemons or sherbet lemons, columbine, cardamom lemons, seedless lemons are more used. Because, these lemons have more juice. However, jamir is not used for making sherbet.

Roasted rui fish with lemon juice is a wonderful food. Besides, glass fish curry with lemon juice is very popular in Bangladesh. ‘Lemon tea’ made with a quantity of tea leaves and lemon juice in hot water is a different addition to the tea culture of Bangladesh. In addition, tea is also made with lemon leaves.
It is not possible to end by talking about the use of lemon in our culture. There is no accounting for how much we eat lemons and citrus fruits.
